Laziest Omlet Ever.

So here it is, our 15 Minute Ziploc Omlet!

The recipe:
  • Get a pot of water boiling on the stove to a rolling boil. If too hot, it will melt the Ziploc!
  • Crack 2 eggs, put them in a Ziploc bag with some milk if desired. Shake bag to combine.
  • Add chopped ingredients (cheese, tomato, ham, onion, mushrooms, etc.) and salt and pepper. Shake again to combine.
  • Close the Ziploc securely. Make sure to get all air out of bag!
  • Place bag in boiling water for 13-15 minutes, depending on desired firmness of omlet.
  • Open bag and watch the omlet roll out easily and perfectly!!!
  • Pair omlet with your favorite breakfast sides and enjoy.
Obviously, we like a LOT of stuff in our omlets....

No beach pictures to share...

...because it rained. But, I've got lots of Scooter pictures!

Yes, Scooters. The weather was nasty rainy for most of our weekend getaway, so our little group ended up renting Honda Scooters for the afternoon on Saturday. Josh did great - me, not so much. I tried really hard to hurt myself, coming close at least 3 times. I should not be allowed to drive these things by myself!

Thankfully, I'm fine, and we really did have so much fun on them. Top speed, 41mph - Josh, not me. =D


Having a long weekend together was great for Josh and I. It was relaxing, and we had lots of time in the car just talking on the trip up and back. We haven't been up to Panama City Beach in 5 years (Josh's friend Matt's graduation from Army Helicopter Flight School) and it has really grown up. There were lots of things under construction last time, which are all finished now, and there's a great new shopping plaza that is huge with regular stores and restaurants. (There was even a Unique Boutique with Vera Bradley! Self-control.....)

Last week Angela sent me a recipe for 15 Minute Ziploc Omlets (inspired by my 5 Minute Chocolate Cake in a Mug) so we tried them on Sunday morning. They completely worked and were SO GOOD! I'll post the recipe and pictures soon.

All in all, a much needed vacation away from Orlando together. And we really liked our rented Pontiac G6!

Panama City... here we come.

So it's another 3-day weekend (thank you Memorial Day), and Josh and I are heading up to the panhandle to spend the weekend at the beach with our good friends Paul and Angela! Don't worry, we rented a car - we know ours are in no shape to drive 800 miles roundtrip. Speaking of, we really need to look into buying new cars....

Unfortunately, we did not register for beach chairs, a beach cooler, beach towels or beach activities for the wedding... and diving isn't an option yet.... so off to Walmart I go tonight, because we leave tomorrow afternoon!

The Newlyweds are Here

Josh and I had a busy weekend together, again. A couple graduation parties, seeing family and old friends, just plain running around... and we get asked so many times (separately and together) how we are doing now that we're married, is it different, etc. The answer we give is so opposite what I thought we would be giving almost 3 months into this thing.

Being married is so much easier than dating.

No, seriously.

Josh and I both agree, and we tell each other this - that we absolutely love being married. We did long distance for so long and lived separately here in Orlando until we were married... we can't tell you just how much easier all this is now. Yes, we have newlywed stuff we are working through. But, we wouldn't change a minute of our life together. It's amazing also what a commitment to love will do for you as well - Josh has discovered a couple (read: many) things that I do or don't do that he would like to me to fix now that we live together, and vice versa. (Apparently, turning off lights and unplugging my computer will save us $10 a month? And Josh is learning the fine art of dealing with me in the mornings...) The neat thing is to see each of us actually change whatever the issue is for the other person. When there's no pride or competition, and just love and a sense of being a "team"... it's downright awesome.

So yes. We are doing wonderful. And this marrige thing really is pretty fun.

Gator (Law) Grads!!

My best friend in the whole world graduated from the University of Florida's College of Law yesterday! =D Robyn has spent the last SEVEN years in Gainesville working on her undergrad and now law degree and she's finally finished. It's been a long road, with so many twists and turns we lost count... but here she is. Graduated. What a wonderful feeling.

Mom and I drove up to my old stompin' grounds where we met up with Robyn's whole family. We weren't sure if Josh had to go down to Clearwater this weekend to fly or not, so he stayed behind. (As previously mentioned, he's not the biggest fan of graduations anyway....). It took Mom and I 45 minutes to find parking, and that was after she just dropped me off so I wouldn't miss Robyn's processional in. She ended up parking at the law school, which is a good 3/4 of a mile from the O'Connell Center....

Good for us, the UF Powers That Be decided to put everyone in alphabetical order, so they were late starting the ceremonies by... 45 minutes! Mom walked in right as the music started playing. ;)

Graduation itself was really emotional for a lot of reasons, but it was so wonderful to see her walk across that stage. And for the LAST time.
Right after the above picture, dark clouds were ominously close; Mom and I knew a downpour was inevitable... and we were parked close to a mile away. At this point, we started heading for the car. With still well over half-way to go, we started feeling raindrops, looked at each other, and took off running. Full blast. Down SW 2nd St. If someone were to have had a video camera......

I'm happy to say we made it to the car just as the heavy stuff started, but what a site we must have been running in our heels and dresses! (Our feet are still recovering.)

Robyn and her roommates had a reception at their house near downtown Gainesville, and it was so nice to catch up with old friends and see Robyn's family that I grew up with. For so many reasons, it was such an amazing day.
Congrats Robyn! I know you are going to absolutely blow us away with what you accomplish in your future career. You are already such an inspiration, and I hope you know that.

P.S. Robyn's gift from me was of course, a few Pandora beads..... and... a 3-day cruise to the BAHAMAS!!!!!! I've never been, and she loves them, so we're going either in 2 weeks or next month.... we're so excited!

Happy Mom's Day!

Hope all you momma's had a wonderful day!

We spent the day with Josh's family this morning and my family this evening. Lunch at Mimi's Cafe, then over to Titusville!

Kristen graduated!!! Anybody hiring?

Josh and I dropped off Abby with her two sisters this morning and headed down to West Palm for Kristen's Graduation! We got there using Josh's shnazzy new TomTom he won this week at his Aviation Conference in Nashville... not that we needed directions, I knew how to get there. But again, we just had to use it. =)

Ceremony went great (albeit, they are always long... we were reminiscing about mine that they all had to sit through, and it was even longer! Can't we just get to the tassle-turning, hat throwing quicker??) and Kristen looked beautiful! The keynote speaker was the current President of the Southern Baptist Convention, and this was the last year for the current President of Palm Beach Atlantic - so it was a big day for the University.

After literally (ok, not literally, but almost) forcing our way out of the parking lot at the West Palm Convention Center, we all met back up at none other than Chick-fil-a where Josh and I gave Kristen her present!

5 Minute Chocolate Cake in a Mug

I had to test it. I got this recipe through email, but I've also seen it before and just HAD to know if it worked.

It does!!


Here's the recipe: (**I substituted applesauce for the oil, and used fat-free milk. Came out fine, with less fat!**)

4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
A small splash of vanilla extract
1 large coffee mug (MicroSafe)

Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly.
Pour in the milk and oil and mix well.
Add the chocolate chips (if using) and vanilla extract, and mix again.
Put your mug in the microwave and cook for 3 minutes at 1000 watts.
The cake will rise over the top of the mug, but don't be alarmed!
Allow to cool a little, and tip out onto a plate if desired.

BIG week!

1. Our wedding videos are DONE. I've been emailing back and forth with Ana from One I Productions to get the correct music to her, and tonight she emailed and said they're finished! She has to wait on her DVD cases to come in next week, and then she'll be mailing them out. BUT, she added another highlight video that is all about our photo session times... here it is! 2. Our canvas should be done tomorrow! We ordered a 20x24 canvas painting from Sams Club of one of our favorite wedding photos from when we were outside by the lake - it will soon grace the wall of our family room.
So excited! We also ordered a poster print of one of our engagement pictures from Sams that we used for the wedding, which is now above our bed. They do great work!

3. We're puppy sitting Abby's sister Lacey Thursday and Friday! Two beagles in an apartment... woohoo!

4. We're puppy sitting Lacey because: Kristen is GRADUATING on Saturday! We're driving down to West Palm on Saturday to watch her walk. We are so excited for her and so very proud. Congratulations hun!

5. I am nine addresses away from being done with ALL of the thank you's! Such a daunting task, but very rewarding. Hopefully I will mail them out Friday. I'll let you know when to check your mailboxes!

Bring me something from Nashville....

Josh is at an Army Aviation Conference this week with his unit in Nashville. I joking said last week that I wanted to come along because I've never been to Nashville (that's the home of country music, in case you hadn't heard - my mothership lol), but that wasn't possible seeing as how it's Monday - Wednesday and I have a lack of vacation/PTO time due to a little trip we took back in February...

Maybe we should have decided for me to just take some days off without pay, because my dear husband's conference is at the GAYLORD OPRYLAND in Nashville. Yea..... apparently his room overlooks the gardens and fountains and pools....


In addition to their meetings and networking events, they also have a huge aviation expo with lots of aircraft set-up, simulators, etc. Josh said I would love it. I agree!

Funny side story: Somehow doing laundry last weekend I folded a pair of MY jeans and put them with his on his shelves. Somehow those same jeans ended up in Josh's suitcase, and are now in Nashville with him. I suggested that maybe he wear them since tight jeans are in style up there in country-town, but I don't think he was amused. Thank goodness he brought two pair, and the second was actually his!

I asked Josh to bring me something from Nashville... but now that may just end up being my own pair of jeans.... =)
